Epidemiology provides a framework for studying the relationship between risk factors and human health outcomes and for drawing inferences from studies addressing these outcomes. Nutrition represents disciplinary breadth ranging from nutritional biochemistry to nutrition policy, and encompasses the study of the effects of dietary exposures on epigenetics, immune function, inflammation, psychological states and traits, and a wide array of pathophysiologic processes, including carcinogenesis. This course is designed to introduce highly motivated students to this extraordinarily interesting disciplinary diversity and to instill in them an appreciation of methodologic challenges that are important to address if we are to understand the complex role of diet in determining health.
