Campus Conversation: Kendall Cox

"I started my Instagram account @kbceatz during winter break of my sophomore year. After quarantine, I got more into health and fitness. I thought making a food-focused Instagram account would be a fun thing to take up some of my time because classes were online. I started out posting mostly coffee drinks; I worked as a barista a coffee shop during the summer at home in Rochester, New York, where I got to hone in on my coffee-making skills and got creative with some of the recipes I’ve posted.
Nowadays, I’ve gotten more into nutrition, and I like to post easy meals for college students that they can make in under 20 minutes. I like turning basic meals into something more and adding my own twist to simple recipes. I’ve perfected my avocado toast recipe by adding some lemon juice, spicy honey, red pepper flakes and topping it off with a sunny-side up egg!
I’m pre-physical therapy, and I also want to work in performance nutrition at some point. I’m a nutrition intern here with the football team and I find it interesting to see how food can help athletes perform at their best, whether that be coming up with new pre-workout drinks, mid-day snacks or post-workout meals.
I love the community of foodies that I’ve found on Instagram. They give me constant recipe inspiration, and joining this community has really helped with my knowledge and relationship with food. I love being able to share my recipes and help people find easy ways to navigate college life."
